About Rosa Matto
Formerly a teacher of English, History and Drama, Rosa made a radical career change to the hospitality industry in 1983. After training at the Regency Institute in South Australia, The Rosa Matto Cookery School opened in Adelaide in 1989, where leading chefs are invited to teach dedicated amateurs in the art of their particular specialty. Rosa's own passion has been "to explore and extend the notion of Italian regional cuisine beyond the clichés and to 'translate' this ancient cuisine steeped in tradition and folklore to our way of life."

Rosa has been a guest chef in numerous hotels and restaurants, including the acclaimed Mandarin Oriental Hotel in Jakarta, and is a regular consultant and contributor to Australian radio and television shows. Currently she is the Vice President of the Adelaide Chapter of Les Dames Escoffier.
